How about some homemade muffins for a delecious addition to your Sunday dinner today.

Blueberry Apple Cinnamon Muffins

Number of serving: 12
Preparation time: 15 Minutes
Cook time: 20 Minutes

 

Ingredients:

1 cup All-purpose flour
1 cup whole wheat flour
1 Tablespoon baking powder
1/2 teaspoon salt
1 cup milk
1 teaspoon pure vanilla extract
1 large egg
Good 1/2 cup canola oil
1/2 cup blueberries, frozen or fresh
1/2 cup diced apples
Topping:
1/2 Tablespoon cinnamon
1 Tablespoon sugar (mixed together)

 

Directions:
Preheat oven to 400 degrees.

Combine flours, baking powder and salt. Set aside.

Mix milk, vanilla, egg and oil.

Add the wet ingredients to the dry and stir until just combined.

Fold in the blueberries and the apples.

Put into 12 muffin cups lined with paper cups. Sprinkle the tops with cinnamon/sugar mixture.

Bake about 20 minutes or until a toothpick inserted, comes out clean.
