Strawberry Bread

Yield: 1 Loaf



1-1/2 cups all-purpose flour

1 cup sugar

1/2 tsp baking soda

1/2 tsp salt

1/2 tsp cinnamon

2 eggs

10 Tbsp. vegetable or canola oil (1/2 cup plus 2 Tbsp.)

1 pint fresh strawberries, hulled and chopped



Preheat oven to 350ºF. Lightly spray a 9x5x3-inch loaf pan with cooking spray. Set aside.


Combine flour, sugar, baking soda, salt and cinnamon in a large mixing bowl. Add eggs and oil. Mix well.


Stir in chopped strawberries. Pour mixture into prepared pan.


Bake for 1 hour.
